๐Ÿฅฌ Hearty Vegetable Soup (Soups & Stews)

๐Ÿ“ Ingredients

  • 1 head of cabbage, chopped

  • 3 carrots, sliced or diced

  • 3 green onions, diced

  • 1 onion, diced

  • 3 celery stalks, diced

  • 1 can garlic herb tomatoes

  • 1 can of corn

  • 6 garlic cloves, minced

  • 3 sprigs of thyme

๐ŸŒฟ Seasonings

  • Old Bay seasoning

  • Italian seasoning

  • Tarragon seasoning

  • Coriander seasoning

  • Oregano seasoning

  • Creole seasoning

  • Pink salt (to taste, after cooking)

๐Ÿฅฃ Other

  • 4 or more cups of vegetable stock

  • Olive oil (or any oil of your choice)


๐Ÿ‘ฉ‍๐Ÿณ Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onions, carrots, celery, and green onions. Sautรฉ for about 10 minutes until softened.

  3. Add the minced garlic and cook for 1–2 minutes until fragrant.

  4. Stir in the tomatoes, corn, seasonings, and vegetable stock. Cook on medium-low heat until the carrots become tender.

  5. Add the chopped cabbage and continue cooking on medium-low heat for about 20 minutes.

  6. Taste and adjust salt or seasonings as desired.
