What You’ll Need

Cod Fillets
2 to 4 thick-cut cod loins (thicker pieces work best in the air fryer).

Oil
Olive oil or avocado oil. Melted butter also works for extra richness.

The Spice Rub

  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Dried oregano
  • Cayenne pepper (optional, for heat)
  • Salt
  • Cracked black pepper

The Sauce

  • Mayonnaise
  • Dijon mustard
  • Fresh dill
  • Minced capers or pickles
  • Lemon juice
  • A pinch of lemon zest

The Process

1. Prep the Fish
Pat the cod fillets completely dry using paper towels. This is key to getting a dark, crispy crust instead of steamed fish.

2. Coat
Brush each fillet generously with oil or melted butter on all sides.

3. Season Heavily
Mix the spices together and press the rub firmly onto the fish. A thick layer helps create that signature “blackened” crust.

4. Air Fry
Preheat your air fryer to 400°F (200°C). Place the fillets in the basket without overlapping.

5. Cooking Time
Cook for 8 to 11 minutes, depending on thickness. The cod is ready when it reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.

6. Make the Dip
While the fish cooks, whisk all the sauce ingredients together. For a finishing touch, sprinkle extra fresh parsley and a bit of lemon zest on top.
