Apple and Yogurt Flan
Reinvent the traditional yogurt cake with this ultra-soft and generously fruity version! This delicious apple flan, with its incredibly soft texture somewhere between a clafoutis and a classic cake, will be a hit at teatime or to end a Sunday meal in all simplicity.

Ingredients
3 large apples
2 plain yogurts (125 g each)
3 eggs
100 g sugar
80 g all-purpose flour
50 g melted butter
1 teaspoon vanilla extract
1 teaspoon baking powder
A pinch of salt
Powdered sugar (optional, for decoration)
Preparation
Step 1: Prepare the apples
Preheat the oven to 180°C (350°F).
Peel the apples, remove the cores, and cut them into thin slices.
Lightly butter a cake or pie pan and arrange the apple slices evenly in the bottom.
Step 2: Prepare the batter
In a large bowl, whisk the eggs and sugar until the mixture becomes light and slightly frothy.
Add the yogurts, melted butter, and vanilla extract, then mix well.
Stir in the flour, baking powder, and salt, mixing until you obtain a smooth batter without lumps.
Step 3: Assemble and bake
Pour the batter over the apples.
Bake for 40 to 45 minutes, or until the top is lightly golden and a knife inserted in the center comes out clean.
Remove from the oven and let the flan cool completely.
Step 4: Rest and serve
Refrigerate the apple and yogurt flan for at least 2 hours before serving.
Sprinkle with powdered sugar if desired.
Tips
For extra flavor, add ½ teaspoon of cinnamon to the batter.
You can replace part of the apples with pears for a delicious variation.
This dessert tastes even better the next day after resting overnight in the refrigerator.
